Orange Sweet Potato Casserole

 4 large sweet potatoes  3-4oz concentrated froze orange juice      Miniature Marshmallows

 Salt    Margarine (optional)

 

Wrap the potatoes in foil and bake in a slow oven until tender.  Let the potatoes cool and then peel. 

In a large bowl whip the potatoes with a mixer and add about 3-4 oz concentrated frozen orange juice, salt to taste and add  If desired you may add some margarine.

When ready to use place in a large baking dish and heat about 30 minutes, then cover with miniature marshmallows and heat until they are melted.

 

Buckeyes

 

3 lbs. powdered sugar   1 lb. oleo or butter

2 lbs. creamy peanut butter  1 large package chocolate bits

Approximately 1c shaved paraffin wax

 

Mix first three ingredients well (with hands).  Roll into about 200 balls.  Let it stand in the refrigerator overnight.  Melt chocolate bits and paraffin wax over hot water.  Dip balls in chocolate mix, using toothpicks, leaving small area uncoated.  Lay on cookie sheet that has been coated with waxed paper.  Chill.

Broccoli Casserole

 

2 cups cooked broccoli  1 cup cream of mushroom soup  2 eggs

1 cup grated cheddar cheese 1 cup mayonnaise   ½ stick butter, melted

1 ½ cups Ritz crackers

 

Mix first 5 ingredients together in a casserole dish.  Crush crackers and sprinkle over the broccoli mixture. Drizzle melted butter on top.

 

Bake at 350 º for 1 hour or until set.
